I HAVE TO SAY THAT YESTERDAY WAS NOT A FUN DAY. HAD DISHWASHER PROBLEMS---TECH CAME OUT TWICE. ALSO HAD TIME WARNER PROBLEMS---COMPUTER DOWN TOO MANY HOURS. THEN SPOKE TO THE HEALTH INSURANCE CLAIMS DEPARTMENT---THEY ARE REALLY DENSE. I DON'T KNOW IF THESE CLAIMS PEOPLE ARE GENETICALLY PRODUCED TO FRUSTRATE YOU----THEIR LOGIC DOESN'T MATCH MY LOGIC.
ANYWAY-----THESE SQUASH ARE THE FIRST SQUASH I HAVE GROWN AND HARVESTED. THE FLESH IS SO NICE AND ORANGE. I MADE CREAM OF SQUASH SOUP AND ROASTED THE OTHER HALF.I STILL HAVE THE SECOND ONE ON THE COUNTER---I UNDERSTAND THAT THEY KEEP VERY WELL. I FOUND A GREAT RECIPE ON THIS SITE www.elanaspantry.com FOR BUTTERNUT SQUASH LATKES---CAN'T WAIT TO TRY IT
Latkes
4 cups butternut squash, peeled and grated
1 small onion, peeled and grated
3 eggs, whisked
grapeseed oil, for frying

4 cups butternut squash, peeled and grated

grapeseed oil, for frying
- In a large bowl make latke batter by mixing together squash, onion and eggs
- Use your hands to form batter into 3 inch patties
- In a large skillet, heat oil
- Fry patties on each side over medium heat until golden brown and crispy
- Remove latkes from pan and place on a paper towel lined plate to drain excess oil
- Repeat Steps 2-4 until batter is used up
- Serve with applesauce, sour cream or yogurt
